Boost Fiber Intake With These Simple Breakfasts

Fiber improves health in several ways. Fibrous foods make you feel full, so you often eat less. It lowers your blood pressure and can help lower bad cholesterol. Muesli

In an airtight container, mix 4 cups of rolled oats, ½ cup wheat germ, ½ cup dried fruit, ½ cup chopped nuts, and ¼ cup sunflower, hemp, or chia seeds. Eat it with warm or cold milk, mix it into yogurt, or add it to smoothies.

Your parents are free to mix it up. If they like almonds and pecans, they could use a half and half mix. If they like raisins, they’re a popular addition to muesli. They could just as easily use dried cranberries, cherries, or blueberries. A mix of dried fruit is also fine.

Overnight Oats

Invest in some small containers or half-pint mason jars. In each one, place 1/3 cup old fashioned oats. Top that with a few tablespoons of applesauce, a sprinkle of cinnamon, a tablespoon of chopped walnuts, and some dried apples, dates, or raisins. Pour enough oat, almond, or regular milk over the top to fill the jar. Place the lid on and put the jars in the refrigerator.

Each morning, your parents simply need to pull out a jar and enjoy a quick breakfast that’s packed with fiber. They’re welcome to switch the kind of dried fruit and nuts being used.

Veggie Scrambled Egg Sandwiches

Beat eight eggs with a cup of shredded low-fat cheese. Stir in chopped broccoli, diced red pepper, and chopped Swiss chard. Mix well and pour into muffin tins that have been lined with foil muffin cups. Bake at 350 degrees F for 30 minutes or until set. Let the eggs cool.

Place those egg muffins into containers and refrigerate or freeze. For breakfast, microwave the egg muffin for a couple of minutes. Toast a whole-grain English muffin. Place the egg between the English muffin halves to make a fiber-rich breakfast sandwich.
